Superfood Chicken Noodle Soup for One

2 cups chopped carrots, onion, and celery

1 garlic clove, minced

16 oz. Osso Good Chicken Bone Broth

2 cups chopped kale

6 oz. shredded cooked chicken (a rotisserie chicken works great and saves time!)

2 oz. chickpea pasta

Olive oil

Salt and pepper to taste


Heat 1–2 tablespoons of olive oil over medium heat in a large, heavy-bottomed saucepan. Add in chopped carrots, onion, and celery and cook until softened, 3–5 minutes. Chop and cook bacon over medium heat in a Dutch oven until crisp and browned. Remove from pan and drain on a paper towel, reserving bacon fat in the pan.
