Superfood Chicken Noodle Soup for One

2 cups chopped carrots, onion, and celery

1 garlic clove, minced

16 oz. Osso Good Chicken Bone Broth

2 cups chopped kale

6 oz. shredded cooked chicken (a rotisserie chicken works great and saves time!)

2 oz. chickpea pasta

Olive oil

Salt and pepper to taste

 

Heat 1–2 tablespoons of olive oil over medium heat in a large, heavy-bottomed saucepan. Add in chopped carrots, onion, and celery and cook until softened, 3–5 minutes. Add garlic and cook an additional 1 minute. Add in 16 oz. of Osso Good Chicken Bone Broth, chopped kale, and cooked shredded chicken. Continue to simmer for 15 minutes. Meanwhile, cook 2 oz. of chickpea pasta in boiling salted water for 8–10 minutes, or until al dente. 2 oz. uncooked bacon

4 cups mixed greens: kale, collards, swiss chard

2 red bell peppers, sliced

Chop and cook bacon over medium heat in a Dutch oven until crisp and browned. Remove from pan and drain on a paper towel, reserving bacon fat in the pan. Adding a little olive oil if necessary, sauté greens, peppers, and garlic in bacon fat and oil until softened, 2–3 minutes. Add in crushed tomatoes, bone broth, and sausage links to pot.
