This simple Italian Wedding Soup Recipe using Osso Good Bone Broth is packed full of healthy nutrients!  The best part is that the flavors taste even better the following day making it delicious both today and tomorrow!  With just a few fresh ingredients, it’s easy on the budget and fabulous for healing your gut!

The first step to our recipe is making the meatballs.  You just mix all of the ingredients together in a bowl.

Once these ingredients are combined, you can then add the meat.  This recipe calls for both beef and pork, giving it the heartiness and flavor that a meatball deserves.

After you mix all of the ingredients, you simply form the meat into rounded bite-size balls.  You want to make sure that all of the meatballs are about the same size so that they are cooked through evenly.

Now that the meatballs are formed, you can throw them into the fridge until you’re ready to use them.  *Timesaver Tip – make the meatballs up to one day ahead of time and leave, covered in the refrigerator until you’re ready to use them.  After chopping the vegetables (onion, carrot, and celery) you can sautee them in the stock pot for a few minutes to soften.

Once the vegetables have softened, you can pour your Osso Good Chicken Bone Broth on top, allowing the mixture to come to a slow boil.  (By heating the Osso Good Bone Broth too much, you could potentially burn off the gelatin, which is a highly nutritious aspect of bone broth.)  You then add the meatballs into the broth and allow to cook, covered for 8-10 minutes or until the meatballs begin to float.  Add the spinach at the end and serve!

Ingredients

Meatballs:

1/2 medium yellow onion, organic

1/3 c chopped fresh parsley, organic

1 large egg, pastured

1 clove garlic, pastured

2 tsp coconut flour

1/4 c grated parmesan cheese

2 tsp celtic sea salt

1/2 tsp cracked black pepper

1 lb ground beef, grass fed

1/2 lb lean pork, grass fed

Soup:

1 Tbsp tallow or ghee

2 c peeled & diced carrots, organic

1 c diced celery, organic

1/2 medium yellow onion, organic

10 c Osso Good Chicken Bone Broth

2-3 tsp celtic sea salt

1/2 tsp cracked black pepper

3 c baby spinach, organic

Method

1. Make the meatballs.  Finely chop onion.  Combine it with remaining meatball ingredients.

2. Form the meat into bite-sized meatballs and place on a rimmed baking sheet.  Cover and refrigerate until ready to use.

3. Make the soup.  Heat the tallow in a large stockpot over medium-high heat.  Sautee the carrots, celery, and onion for 5 minutes.

4. Pour in the Osso Good Chicken Bone Broth, 2 tsp of salt and pepper and bring to a slow boil.

5. Reduce the heat to medium and add the meatballs.  Cover and cook for 8-10 minutes, until the meatballs are cooked through and floating to the top.

6. Stir in the spinach and cook for an additional 5 minutes or until wilted.

7. Season to taste, adding a dash of salt or cayenne pepper for heat.
