Paleo Recipe: Sesame Pork and Eggplant Stir Fry

Sauce:

1 cup Osso Good Bone Broth Chicken

6 Tbsp coconut aminos

3 Tbsp toasted sesame oil

2 Tbsp fish sauce

2 tsp tapioca flour

Stir-Fry:

3 Tbsp toasted sesame oil

2 tsp coconut aminos

2 tsp tapioca flour

1 lb pastured pork tenderloin, trimmed, halved lengthwise, and sliced 1/4 inch thick

2 Tbsp grated fresh ginger

5 garlic cloves, minced

2 scallions, minced

2 Tbsp coconut oil

1 lb eggplant, cut into 3/4 inch pieces

1 small red onion, sliced 1/2 inch thick

1 c coarsely chopped fresh basil

2 tsp sesame seeds

Preparation:

  1. Whisk all of the ingredients together for the sauce. Set to the side.
  2. Whisk 2 Tbsp sesame oil, coconut aminos, and flour in medium bowl until smooth, then stir in pork.  In separate bowl, combine ginger, garlic, scallions, and remaining 1 Tbsp sesame oil
  3. Heat 1 tsp coconut oil in skillet over medium high heat until melted.  Add pork, cooking until lightly browned, about 2 minutes.  Transfer to a clean bowl.
  4. Heat 2 tsp coconut oil in now empty skillet until melted.  Add eggplant and cook until softened, about 3 minutes.  Transfer to a clean bowl.
  5. Heat 2 tsp coconut oil in now empty skillet until melted.  Add red onion and cook until softened, about 2 minutes.  Return eggplant to skillet and cook vegetables for another 2-3 minutes.
  6. Push vegetables to sides of skillet.  Add ginger mixture and cook until fragrant, about 1 minute.  Stir mixture into vegetables.
  7. Whisk sauce to recombine.  Add to skillet.  Cook, stirring constantly until sauce is thickened, about 2 minutes.  Stir in pork.  Off heat, stir in basil.  Transfer to a serving platter and sprinkle with sesame seeds.  Serves 4.  Recipe adapted from America’s Test Kitchen.
