Paleo Recipe: Sesame Pork and Eggplant Stir Fry
Sauce:
1 cup Osso Good Bone Broth Chicken
6 Tbsp coconut aminos
3 Tbsp toasted sesame oil
2 Tbsp fish sauce
2 tsp tapioca flour
Stir-Fry:
3 Tbsp toasted sesame oil
2 tsp coconut aminos
2 tsp tapioca flour
1 lb pastured pork tenderloin, trimmed, halved lengthwise, and sliced 1/4 inch thick
2 Tbsp grated fresh ginger
5 garlic cloves, minced
2 scallions, minced
2 Tbsp coconut oil
1 lb eggplant, cut into 3/4 inch pieces
1 small red onion, sliced 1/2 inch thick
1 c coarsely chopped fresh basil
2 tsp sesame seeds
Preparation:
- Whisk all of the ingredients together for the sauce. Set to the side.
- Whisk 2 Tbsp sesame oil, coconut aminos, and flour in medium bowl until smooth, then stir in pork. Â In separate bowl, combine ginger, garlic, scallions, and remaining 1 Tbsp sesame oil
- Heat 1 tsp coconut oil in skillet over medium high heat until melted. Â Add pork, cooking until lightly browned, about 2 minutes. Â Transfer to a clean bowl.
- Heat 2 tsp coconut oil in now empty skillet until melted. Â Add eggplant and cook until softened, about 3 minutes. Â Transfer to a clean bowl.
- Heat 2 tsp coconut oil in now empty skillet until melted. Â Add red onion and cook until softened, about 2 minutes. Â Return eggplant to skillet and cook vegetables for another 2-3 minutes.
- Push vegetables to sides of skillet. Â Add ginger mixture and cook until fragrant, about 1 minute. Â Stir mixture into vegetables.
- Whisk sauce to recombine. Â Add to skillet. Â Cook, stirring constantly until sauce is thickened, about 2 minutes. Â Stir in pork. Â Off heat, stir in basil. Â Transfer to a serving platter and sprinkle with sesame seeds. Â Serves 4. Â Recipe adapted from America’s Test Kitchen.
